Can I start by stating the obvious? Construction projects are not fun. Don’t get me wrong, the results are great. But be honest. If you were putting an outlet in a white island, what color would outlet would you use? Black, of course. Any fool knows that. I mean, you want the very first thing that your eye is drawn to in the kitchen to be the island outlet. Really? Black outlets on a white wall? You would also paint over gouges in the wall without patching them in hopes that no one would notice the gouges that were already pointed out to you. Let’s just say I was NOT at my personal best in terms of behavior yesterday.
So instead of cooking or painting or working in the yard, I went shopping. The good news is that the Easter Bunny is ready to go. The other good news is that the twins are willing to have a birthday party at school even though they really wanted a full-on huge superhero birthday party at home. Another ding against me for Mother of the Year, but I just don’t have it in me to throw a party in two weeks. And I have no idea how long it is going to be before all of my worldly possessions are out of my garage.
Anyway, the shopping ran a bit late and we were saved by Super Lacie once again. I love it when you have all the groceries ready to go for dinner. I love it when the recipe is all in one pot and takes less than 10 minutes to cook. I especially love that the Super Outstanding Lacie cut and measured everything out last night for dinner before I got home. She even took a picture of it all.

Even if you don’t have a Super Lacie (and people, don’t throw stuff at me for having her, I know how lucky I am), this recipe for gnocchi with white beans is perfect for weeknight busy. There are only two things to cut - onion and garlic. Everything else is ready to go. I did not make my own gnocchi for this (obviously) but I did have some leftover white beans in the freezer, which I used in place of canned white beans. This recipe was so simple, it’s almost a shame to write about it. Really, it’s just an excuse to tell you about my black outlet cover.
